Experience roasting at home with "Handmade Hojicha Kit"!I studied how to make and roasting with a hojiki

Did you know you can make your own hojicha? !

As the name suggests, hojicha is roasted tea leaves. If you have a "roasting machine" and "raw tea leaves" at home, you can easily "roast" hojicha.

What's more, when you roast it yourself, the scent spreads throughout the room, and you can feel the aroma as if you were bathed in it! !

... what the hell! I wanna try! !

Let's try making hojicha using the same tea leaves as the hojicha that won the gold medal in the tea selection in Paris by Ishidaen, a tea merchant with a history of 150 years in Sayama.

I ordered the "Handmade Hojicha Kit"

It arrived immediately ♪ This is the "Handmade Hojicha Kit"! !

This time, the challengers are...these two! Fujita & Sasaki from the editorial department.

Fujita Hojicha likes to make a tea latte with soy milk. Can you make your own strong hojicha? Sasaki hojicha has become very popular recently♪ I want to try an “aroma bath” that can only be made by hand!

Yes. Hojicha contains pyrazine, which has a calming effect on the brain.

I'm looking forward to the aroma bath of hojicha~♡

Contents of the Hoji Kit

First, let's take a closer look at what's included in the kit!

①Hojiki

It's officially called "Horoku"! Tokoname roaster.

It is said that far-infrared rays are emitted from the roaster, and it is possible to roast deliciously.

By the way, this roasting machine is priced at 2,400 yen. That means the kit is not a great deal...! ?

(2) Raw tea leaves

Raw tea leaves to make Hojicha.

It looks like a normal sencha tea leaf, but...? This is still the state of raw materials called "Aracha".

What is "Aracha"? Raw tea leaves that have not been pasteurized and that have been temporarily removed from the picked tea leaves and made into a form that can be distributed.

It contains 100g, so if you roast 10g at a time, it will be enough for 10 times!

It's the same tea leaves as Ishidaen Hojicha, which won the gold medal in Paris! !

③Hojicha from Ishidaen

This is the Hojicha made by the tea merchant/Ishidaen! In other words, if this happens, it is correct! !

Wow! This hojicha...It seems that it won the gold medal at the world's leading Japanese tea contest, the only one in France! !

Of course, you can also buy them individually♪

World-class roasted green tea from Ishidaen. It's amazing that you can experience using the same raw tea leaves.

④Instructions

Instructions on how to roast hojicha and how to brew hojicha recommended.

Since the procedure and points are also written, it would be nice to try it on this street first!

What to prepare yourself

In addition to the roasting kit, let's check what to prepare at home!

Things you need to prepare yourself

● Direct fire (gas stove or cassette stove) ● 2 towels that do not melt with heat ● Scale

We prepared a common cassette stove.

Towels are needed to wrap around the handle of the roaster and place the roaster on. So pot holders and trivets are OK!

In addition, it would be nice to have a small plate and a teaspoon! I think you have it...

Of course, prepare teapots and cups♪ (*Even if you don't have a teapot, you can still brew hojicha using tea packs sold at 100-yen shops and supermarkets.)

Does the IH really not respond?

I heard that the roaster needs an open flame... Is IH really not good? ?

I tried it with this IH heater.

As a result, I still can't get it.

Prepare a gas stove or cassette stove.

By the way, it seems that a heating wire type heater is OK! Mr. Ishida used to use something like this↓

Roasting Hojicha yourself

Experiencing the basic roasting method

First, let's try roasting Hojicha!

First, prepare what you will use.

Once you start roasting, you won't be able to take your hands off of it.

①Weigh the raw tea leaves

Smell the raw tea leaves...At this stage, it smells like dried grass and tatami mats♡

First, measure 10g of raw tea leaves.

Hojicha has the best aroma when it is freshly roasted. It's good to roast each time, not in bulk!

Let's roast the amount to drink at once.

②Heat the roaster empty

First, heat the roaster empty for about 1-2 minutes over medium heat.

Don't let it get too hot. It seems to be good if you can touch the sides of the roaster with your bare hands and feel "It's hot!"

Be careful of burns! ! The roaster gets really hot!

③Put in the raw tea leaves and roast.

Now, the game is finally here!

First, turn the heat down and put the raw tea leaves into the roaster!

As soon as you put it in, take the roaster and turn the tea leaves! If you leave it as it is, it will burn.

Is the image like a frying pan? The feeling of returning up and down while including air in the tea leaves.

And the horizontal rotation is also round and round. Make sure the tea leaves are roasted evenly.

30 seconds to 1 minute later

Oh, the smoke is rising♪

The correct answer is to have a fluffy smoke coming out like this!

Smoke rises and smells good~♡ (Strong linear smoke may be burnt)

After 2-3 minutes

Maybe the tea leaves are getting a little yellow? Let's compare the color with Ishidaen's Hojicha.

Ah, not quite yet.

Keep roasting for about 5 minutes, checking every 1 minute.

At home with

(4) Take out the roasted tea leaves

Now it's time to take out the tea leaves!

Yes! Take it out of the handle! ! I wanted to do this! (smile)

*If you leave it in the roaster, it will get hotter and hotter, so put it on a small plate immediately.

Oh, isn't it roasted well? !

The stem is also plump! The overall volume has doubled.

Handmade roasted tea, completed♡

⑥Let's drink

If you drink it with the recommended brewing method (80℃45 seconds)...

Oh, it's delicious! ! !

It smells so good ♡ The flavor is strong! !

The aroma of roasted green tea spreads throughout the room, making it the perfect healing space♪

I changed the roasting method and tried it!

Well, at first, I tried to follow the basics, but... let's try different roasting methods!

These are the 4 things you should try!

➀ Try roasting strongly over high heat ② Try roasting lightly over low heat ③ Can it be done without empty heating ④ Can't it be done with a frying pan?

~Experiment 1~ Roasting over high heat

Speaking of roasted green tea, that fragrant flavor! Would it be more fragrant if roasted over high heat? Let's try!

As with the basics, boil for 1-2 minutes empty, then add tea leaves and turn to high heat.

Wow, it's getting burnt right away! ! Great smoke too!

Hot! ! Hot! !

The towel is on fire! Dangerous! !

…In no time, the black roasted tea was completed.

This is... no good.

Even if you want to roast quickly or darkly, don't use high heat! !

Please do not imitate it because it is dangerous!

~Experiment 2~ Try roasting lightly over low heat

Don't you think, "I can drink raw tea leaves as they are as sencha?" !

So this time, I'm going to try to stop before I'm completely transformed into hojicha! I'm going to roast it on low heat.

Tea leaves change from green to yellowish brown to brown.

Compared to the finished hojicha, this is the color, stop. There is still some green left.

When I tried to brew it, the light blue color was more like yellow sencha than hojicha. !

It seems that the taste is different depending on the person!

Fujita ``Hmm!?

Sasaki ``Slightly... it feels like hojicha...light tea?''

Either way. It's definitely more delicious if you roast it until it turns brown!

~Experiment ③~Can it be done without empty heating?

"Do I have to do the first empty firing??"

Let's see if we can do it!

Put the raw tea leaves into a cold roaster without boiling.

From there, heat over low heat.

Hmmm, no smoke coming up after a few minutes.

When I put the roaster on the stove for a while... the tea leaves finally turned yellow!

From there, roast as usual and you're done!

It takes time! But it worked without any problems ♪ The taste is OK!

This method might be good for beginners! ? First of all, if you want to try it calmly, try "no empty firing" ♪

~Experiment 4~ Can't you do it with a frying pan?

Can I use a frying pan instead of a roaster?

I tried roasting the raw tea leaves in the same way in a frying pan.

It's hard to roast the tea leaves. But now it's yellow.

We did it! It turned into a hojicha color!

It's difficult to remove from the frying pan, but...

Let's drink and compare roasters and frying pans!

I tried roasting as much as possible. (Right = Roasting machine, Left = Frying pan)

Even in a frying pan, it's delicious enough.

But! ! If you compare the drinks... the roaster has a deeper flavor! It smells great too...

Isn't it just a difference that you can't tell unless you drink it? ?

If you want to feel authentic, we recommend the roaster. If you want to finish it easily, I feel that a frying pan is also OK.

How to use the roaster

It seems that this roaster emits far-infrared rays, which makes the roasted tea delicious!

Even in home appliances, there are things like "far infrared rays are emitted to bring out the umami".

I'm sorry. I want to master such a roaster! !

What are other uses for the roaster?

Can I use the roaster to roast something else? I would love to try the next 6!

➀ Sesame ② Almonds ③ Peanuts ④ Brown rice ⑤ Popcorn ⑥ Coffee (roasted from green beans)

➀Sesame

Recommendation ★★★★☆Roasting time about 2 minutes

There are many roasted sesame seeds that are already roasted, but if you roast them in a roaster, the fragrant aroma will be enhanced! It may be good for when you open it and it gets a little damp. It's also delicious to sprinkle over freshly cooked rice instead of furikake♪

②Almonds

Recommendation: ★☆☆☆☆ Roasting time: about 5 minutes

Commercially available almonds are pre-roasted. It feels like "additional baking", but the flavor does not change. It gets really hot inside, so it's better to eat it after it cools down... If it's nuts, maybe roasting raw walnuts is better? !

③Peanuts

Recommendation: ★★☆☆☆Frying time: about 5 minutes

Peanuts are also basically dry-roasted peanuts, which are roasted in the first place. The flavor doesn't change that much. But the best point is that the shell will be easier to crack! In addition, dried peanuts that are not toasted, which are sometimes seen at direct sales stores, are likely to be useful.

④Brown rice

Recommendation ★★★★★Roasting time about 6 minutes

This works! I was able to make "roasted brown rice" by roasting raw brown rice♪ You can also make roasted brown rice in a frying pan, but it was much faster and beautifully roasted using a roaster! When it pops at first, it's exciting (laughs).

⑤ Popcorn

Recommendation ★★☆☆☆Frying time about 2 minutes Start playing

It really jumps on the table because it has no lid! That's why it's fun to do it with everyone when people get together ♪ You can also put aluminum foil in the hole and use it as a lid. The inside of the corn was a little burnt due to the sugar content of the corn, so keep that in mind. And after removing the oil and butter to a plate...

⑥Coffee (roasted from raw beans)

Recommendation ★★★★★Roasting time about 15-20 minutes

You've successfully roasted coffee beans! ! If you can get your hands on unroasted whitish “raw beans”, be sure to try them! It's a little difficult to make your own taste, but it's slowly heated. If it is lightly roasted, it will have a slightly sour taste, and if it is darkly roasted, it will be bitter. The aroma of roasted coffee spreads throughout the room♡ It's worth trying.

●Two Recommended Uses

That's it. The most recommended item in the editorial department is "brown rice"!

If you add salt and roast it, it will be crispy and can be used as a snack. It is popular because it has a rice cracker-like flavor and is delicious.

Roasted brown rice can be used as a topping for salads or as an accent to dishes and desserts. Of course, you can also mix it with tea leaves to make brown rice tea.

One more thing. If you have the chance, I would like you to try ... "Coffee"! !

I was able to roast like this on my first challenge ↓

It's quite difficult to get raw beans, but roasting coffee yourself is pretty cool ♡

Furthermore, the freshly roasted aroma is very good! !

*You also need a mill to grind the beans, so don't forget to prepare when you challenge.

How to care for the roaster

●I don't mind the transfer of odors

By the way, we are mostly concerned about the transfer of odors to the roaster. did not!

It seems better not to put the roaster on the fire while it is still wet... So, in the experiment, I roasted various things in succession, but there was no smell. (Do sensitive people feel it?)

If you wash it properly after coffee, the smell won't stick.

Since it's a big deal, please try various things ♪

●What do you do after you've finished using it?

When you're done using it, just wash it off with water! Don't forget to rinse the handle with water.

Basically, you don't have to use detergent. Only when it is very dirty, wash it with dish soap and a soft sponge.

And. The point is to dry well after washing! !

Insufficient drying can cause mold and cracks.

Hojicha experience is very relaxing.

"Roasting tea leaves by yourself and brewing hojicha."

I want to create time to "roast hojicha" in my busy everyday life...

・When you feel a bit nervous・When you want to relax your head.

For about half a day after roasting, the aroma of hojicha fills the room♡

Please give it a try!
